Cake for Breakfast!

Since Tanner and Abigail have been transitioning from purees and baby cereal to table foods for the past few months, I have been wondering what to do with the remaining boxes of infant cereal and jars of baby food in our pantry. As I was eating breakfast this morning, I went to the Wholesome Baby Food website to search for the pancake recipe that I made a few months ago, but I found this one instead.

I whipped up a batch in no time since I had all the ingredients on hand. I used all-purpose flour, whole milk, applesauce, and punch flavored juice. I ended up adding about 3/4 to 1 c. of juice to get the consistency that I wanted. It made over 30 silver dollar-sized pancakes, which can be frozen and heated up on demand. Baby cereal pancakes are a great finger food for any meal and a great way for your baby to get some extra nutrients. I sampled one (I usually do) and they are really tasty so don't be afraid to serve them to the whole family!


Baby Cereal Pancakes



1 C. whole wheat flour OR 1 1/2 cups of all purpose flour
1/2 C. uncooked baby barley OR rice cereal
1/2 C. uncooked baby oatmeal cereal
1 C. formula OR milk
1/2 C. mashed banana OR fruit of your choice
1 T. melted margarine or butter, unsalted
3 egg yolks
1/2 (or more) C. apple juice OR water


Add cinnamon, nutmeg, dash of vanilla or other flavorings if you wish.

Mix all ingredients together and add enough juice to make pancake consistency. Cook on your cook top in a frying pan as you would with regular pancakes. Cooking these baby cereal pancakes on a griddle will work better as you will have more control over the temperature and will be better able to keep the temperature at a constant heat.
