Gimmie Guacamole

I have wanted Tanner and Abigail to try avocado since the day they began eating solid foods. The Wholesome Baby Food website says, "Avocado makes a great first food for baby due to its texture and creaminess; an extra bonus is that avocado is full or "good" fats and has a high nutrient content!" Over the past 6+ months I have purchased avocados several times at the grocery store but every time I peeled them to serve to the Twinkies they were rotten inside! It was very frustrating. I don't know if I bought them too ripe or if I waited too long to serve them.



This past weekend avocados were on sale at the grocery store so I bought some. I figured fourth time is a charm, right? Today I cut one apart and...TA DA...it was perfect! I gave each baby a taste and they immediately spit it out...so much for that! I decided to use the avocado to make myself some guacamole for lunch. Once I had the guacamole made I gave Tanner and Abigail a taste on a small piece of baked tortilla chip and they LOVED it! I guess I will be buying lots more avocados in the future...EXCELLENT!

Salsa Guacamole




6 ripe avocados, halved, pitted, and peeled
1/4 C. lemon juice
1 C. salsa
2 green onions, finely chopped
1/4 t. salt
1/4 t. garlic powder

1. In a bowl, mash avocados with lemon juice. Stir in salsa, onions, salt and garlic powder. Serve immediately with tortilla chips.
