Comfort Food

Today is a Snow Day. It looks like winter has finally decided to show up...you know, just in time for spring. UGH! I busted out the crock pot this afternoon to make an incredibly tempting and tasty dish perfect for a snowy day. I found this recipe through my newest addiction...PINTEREST! If, like me, you enjoy wasting momentousness amounts of time surfing the web then you should definitely check out Pinterest. Note to self...write a blog post about Pinterest. Anyway I found this recipe on a friends "board" and it was too good not to "repin". I mean chicken, cheese, bacon, and tater tots? It is like the holy grail of food!

Cheesy Chicken, Bacon, and Tater Tot Crock Pot Bake
Serves 5-6


1 (32 oz.) bag of Tater Tots
1/2 (3 oz. bottle) bacon bits
5 boneless, skinless chicken breasts
1 1/2 c. Colby cheese, grated
1 1/2 c. Monterey Pepper Jack cheese, grated
3/4 c. milk
salt and pepper

1. Grease the bottom of the Crock Pot and layer 1/2 of the tater tots in the bottom.
2. Sprinkle with 1/2 of the bacon bits (1/4 of the whole jar).
3. Combine the two cheeses and sprinkle 1/3 over the bacon bits and tater tots.
4. Top cheese with chicken breasts. Sprinkle chicken with salt and pepper to taste.
5. Top chicken with another 1/3 of the cheese mixture.
6. Sprinkle with remaining 1/2 of the bacon bits (1/4 of the whole jar).
7. Add remaining tater tots.
8. Top with final 1/3 of cheese mixture.
9. Pour milk over the top.
10. Set Crock Pot on high and cook for 3-4 hours.

Note: I went to the grocery store on Monday (my weekly trip) with Tanner and Abigail in tow. They are usually great at the grocery store so I don't hesitate to take them by myself. This week they began getting a little antsy sitting side by side in the (spaceship) cart so I gave them each an item to hold...bacon bits and garlic powder. I wanted to give them items that they could easily grasp and would hold their attention for a short period of time. The bacon bits and powder made noise when they shook them so I was golden for about five minutes until they began fighting over who had what (oh well). Fast forward to this afternoon...I am in the kitchen getting all the ingredients together for this Crock Pot bake and I can't find the bacon bits! I search everywhere, cabinets, pantry closet, EVERYWHERE! My husband tries to calm my aggravated nerves by saying, "sorry". Thanks for trying honey, but "sorry" doesn't put bacon bits in my hand (love you Matt)! He goes on to remind me that we have some pre-cooked bacon in the freezer downstairs and suggests that I cut that up to use in place of the bacon bits...GREAT IDEA (thanks Matt). Before going to get the bacon from the freezer, I go to my purse to look at my receipt from the grocery store. Guess what? The bacon bits never got rung up....hmmmmm...I wonder why? Oh the joys of grocery shopping with kids. I was unable to find Colby cheese at the store so I used cheddar and plain Monterey Jack cheese instead.

It used to be ok when I could fit him in the seat but when he goes he insists on riding in the cart, therefore I have no room to put anything. So, he no longer goes in the grocery store. Last time I pulled in the parking lot with him, he looks at me and says "Gabe stay right here, you be right back". I said, "Sorry buddy but you have come inside with me". He then proceeded to spaz out and throw a fit. Guess what, we didn't go inside. I got back in the truck and drove home. Luckily for me, my parents live a half of a second away, so when we (Ron has to go) go grocery shopping Gabe gladly wants to go to Grammie and Bampas house.
