Chicken and Rice

I found this recipe while browsing through the pages of my 365 Easy Chicken Recipes cookbook. I just happened to have all the ingredients on hand (this rarely happens...but I love it when it does) so I decided to make it for dinner last night. It took about 5 minutes to put together and the smell that came from the oven while it cooked was intoxicating! It was delicious; the chicken was tender and the rice was flavorful and not too mushy (I hate mushy rice).

So Simple Chicken and Rice
Serves 4 to 6


4-6 boneless, skinless chicken breast halves
Seasoning salt
Pepper
1 c. rice
1 (1 oz.) packet onion soup mix

1. Preheat oven to 350 degrees. Spray a 9 by 13-inch baking dish with nonstick spray.
2. Pour rice into the bottom of the prepared baking dish.
3. Place chicken on top of rice and sprinkle with seasoning salt and pepper.
4. Mix 1 1/2 c. water with onion soup mix and pour over chicken. Cover and bake for 1 1/2 hours.
