Matt's pancake suggestion came at a great time because Tanner and Abigail both have a little stomach bug. Last night Tanner threw up twice and the thought of giving him spaghetti for dinner and possibly having to clean it up "vomit style" in the middle of the night made my stomach lurch a little bit...so pancakes it is!
Serves 4
3/4 c. milk
2 T. white vinegar
1 c. flour
2 T. white sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 egg
2 T. butter, melted
cooking spray
1. Combine milk and vinegar in a large bowl and set aside for five minutes to "sour".
2. Combine flour, sugar, baking powder, baking soda, and salt in a medium bowl.
3. Whisk egg and butter into milk and vinegar mixture.
4. Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
5. Heat a large skillet over medium-high heat, and coat with cooking spray. Pour 1/4 cupful of the batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula and cook until browned on the other side.
Note: I double to recipe and freeze the extra pancakes to reheat for Tanner and Abigail in the future.
