Tater Raisin' Man

My father-in-law harvested the potatoes in the garden last weekend and was amazed by how many red potatoes he dug in the first row!
In honor of all his hard work I decided to make potato pancakes for dinner tonight. I wanted to use my dad's recipe but he is currently away from home and unable to give me the recipe. I looked on my favorite recipe website (allrecipes.com) and found one that was very similar. Everyone loved them, even Tanner and Abigail enjoyed them.

German Potato Pancakes



2 eggs
2 T. flour
1/4 t. baking powder
1/2 t. salt
1/4 t. pepper
6 medium potatoes, peeled and shredded
1/2 c. onion, finely chopped
1/4 c. vegetable oil

1. In a large bowl, beat together eggs, flour, baking powder, salt, and pepper. Mix in potatoes and onion.
2. Heat oil in a large skillet over medium heat. Drop heaping tablespoonfuls of the potato mixture onto the skillet. Cook about 3 minutes on each side, until browned and crispy. Drain on paper towel.
