Some Call It Gravy...I Call It Sauce
No one in the Kopishke family, myself included, like tomatoes. We don't buy them in the store or grow them in the garden, so when I came home and found a bag full of them on my porch I wasn't sure what to do with them. Should I feed them to the chickens, put them on the compost pile, or pass them on to someone who will eat them? The bag of tomatoes sat on my kitchen counter for a few days until I decided that I would use them to make spaghetti sauce. Later that day I approached Wayne and his wife Genie in their garden and asked if they left the bag of tomatoes on our porch. Mr. Cole confirmed my suspicion and Genie quickly informed him, "They don't like tomatoes." I told them that I was going to make spaghetti sauce and they offered me more tomatoes for my recipe. They weren't the best tomatoes they had, since Genie had picked all the perfect ones earlier that day, but I simply cut off the bad parts as I chopped them up for the sauce. When Matt came in from splitting firewood that afternoon he said, "It smells delicious!" We haven't eaten any yet, but I plan to use some later this week. I gave a container to Mr. Cole yesterday as a thank-you for the tomatoes...I hope they like it!
4 onions, chopped
4 cloves garlic, minced
1 green bell pepper, chopped
1/2 cup vegetable oil
16 cups chopped tomatoes
2 tablespoons dried oregano
2 tablespoons dried basil
1/4 cup chopped parsley
1/4 cup white sugar
2 tablespoons salt
3/4 teaspoon ground black pepper
1 (6 oz.) tomato paste
1. In a large pot saute together the onion, garlic, green pepper, and vegetable oil. Cook until onion is transparent.
2. Add the chopped tomatoes, oregano, basil, parsley, sugar, salt, and ground black pepper. Cook for 2 to 3 hours on low heat. Stir frequently.
3. Let sauce cool. Pour sauce into quart size freezer containers. Store in freezer.
4. When ready to use sauce, stir in can of tomato paste.
Note: I pureed it (in small batches) before putting it into containers to freeze.
