It is a cloudy, rainy day here in Liberty, Maine which is perfect weather for...baking! I decided that when the twins go down for their nap I am going to bake some cookies so I went to my shelf of cookbooks to search for a NEW cookie recipe. In my Libby Family Favorites cookbook (from Libby Camps in T8-R9, Maine) I found a recipe for chocolate chip pudding cookies.

Chocolate Chip Pudding Cookies

2 1/4 c. flour
1 t. baking soda
1 c. butter or margarine, softened
1/4 c. granulated sugar
3/4 c. firmly-packed brown sugar
1 pkg. (4 serving size) Jello instant pudding *
1 t. vanilla
2 eggs
1 (12 oz.) pkg. chocolate chips
1 c. chopped nuts (optional)

* Butter pecan, butterscotch, chocolate, French vanilla, or any flavor of pudding mix will work.

1. In a small bowl mix flour and baking soda.
2. In a large bowl combine butter, sugars, pudding mix, and vanilla. With an electric mixer, beat until smooth and creamy. Beat in eggs.
3. Gradually add flour mixture. Stir in chocolate chips and nuts (optional). Batter may be stiff.
4. Drop by rounded spoonful onto ungreased cookies sheets about 2 inches apart.
5. Bake at 375 degrees for 8 to 10 minutes.

Ice Cutting 2009

Matt and I were able to visit Libby's Sporting Camps with our friends Tim and Ali (Libby) Winslow for their ice cutting weekend in February 2009. We hope to return with Tanner and Abigail someday when they are open for hunting and fishing.
