Chocolate Chip Pudding Cookies

2 1/4 c. flour
1 t. baking soda
1 c. butter or margarine, softened
1/4 c. granulated sugar
3/4 c. firmly-packed brown sugar
1 pkg. (4 serving size) Jello instant pudding *
1 t. vanilla
2 eggs
1 (12 oz.) pkg. chocolate chips
1 c. chopped nuts (optional)
* Butter pecan, butterscotch, chocolate, French vanilla, or any flavor of pudding mix will work.
1. In a small bowl mix flour and baking soda.
2. In a large bowl combine butter, sugars, pudding mix, and vanilla. With an electric mixer, beat until smooth and creamy. Beat in eggs.
3. Gradually add flour mixture. Stir in chocolate chips and nuts (optional). Batter may be stiff.
4. Drop by rounded spoonful onto ungreased cookies sheets about 2 inches apart.
5. Bake at 375 degrees for 8 to 10 minutes.

Matt and I were able to visit Libby's Sporting Camps with our friends Tim and Ali (Libby) Winslow for their ice cutting weekend in February 2009. We hope to return with Tanner and Abigail someday when they are open for hunting and fishing.

I used butterscotch pudding mix with NO nuts (too lazy to chop and too cheap to buy ones already chopped). I used the smallest Pampered Chef scoop and it made 52 small cookies. They are DELICIOUS...my new favorite cookie!!!
