Cookie Monster

Before I left for Caribou last Sunday I had to bake some cookies for Matt to take in his lunch while I was gone. I looked through some cookbooks and found the following recipe. After I had put the first two trays of cookies in the oven to bake I thought to myself, "How funny that this recipe doesn't have any eggs in it." It wasn't until I sat down to type the recipe for my blog post that I saw that there was, in fact, supposed to be an egg in the cookies. Oh well! Once the first batch came out of the oven, I tasted one and it was delicious. I will admit this is the third recipe in two weeks that I have made where I have accidentally omitted an ingredient. I must be losing my mind.

Double Chocolate Cherry Cookies
Makes 4 dozen


1 1/4 c. sugar
1 c. butter, softened
1/4 c. milk
1/4 t. almond extract
1 egg
1 3/4 c. flour
1/3 c. unsweetened baking cocoa
1/2 t. baking soda
1 c. quick-cooking oats
1 c. semisweet chocolate chips
1 c. dried cherries

1. Preheat oven to 350 degrees.
2. In a large bowl, beat sugar, butter, milk, almond extract, and egg with an electric mixer on medium speed until smooth.
3. Stir in remaining ingredients.
4. Drop by rounded tablespoonful about 2 inches apart onto ungreased cookie sheet.
5. Bake for 10 to 12 minutes or until almost no indentation remains when touched in center and surface is no longer shiny.
6. Immediately remove from cookie sheet and place on cooling rack.

Note: I used Craisins instead of dried cherries because that is what I had at home.

  1. I made these cookies yesterday while I was visiting my parents. This time I used the egg like the recipe called for. The batter was not a dry as before and the cookies spread out more as they baked, but basically they tasted the same. Oh, and they didn't have almond extract so I used vanilla..no big change.
