Super Recipe for Super Bowl



With Super Bowl XLVI approaching this weekend I thought I would share my chili recipe for those of you still thinking about what to make and enjoy while watching the commercials...I mean the football game. Believe it or not this is a Weight Watchers recipe...but you would never know it. GO PATS GO!

Zesty Beef Chili
Serves 6

1 t. olive oil
1 large onion, chopped
3 cloves of garlic, chopped
4 1/2 oz. chopped green chiles (canned, drained)
2 T. Cajun seasoning
1 lb. ground beef
28 oz. diced tomatoes
1 c. salsa
1/2 c. water
1/4 c. chili powder
30 oz. kidney beans

1. Heat the oil in a large nonstick saucepan over medium heat. Add onion and cook, stirring occasionally, until translucent (about 6-8 minutes).
2. Add garlic, chiles, and Cajun seasonings; cook, stirring constantly, until fragrant (about 1 minute).
3. Add ground beef and cook, breaking up with a wooden spoon, until browned (about 8 minutes).
4. Add tomatoes with their liquid, salsa, water, and chili powder. Bring to a boil, then reduce the heat and simmer, covered until flavors are blended and chili thickens (about 1 hour).
5. Stir in beans and cook until heated through. Serve with a dollop of sour cream and shredded cheddar (or Mexican blend) cheese.

Note: I have used ground turkey in place of ground beef and it is just as tasty!
