Not Your Mother's Meatloaf

Grandma's Meatloaf
Serves: 9


1 lb. ground beef
1 egg, beaten
1 small onion, chopped
3/4 c. grated Parmesan cheese
1/2 c. oatmeal
1 (14.5 oz.) diced tomatoes
1/2 t. salt
1/2 t. pepper
1/2 t. celery salt
1/4 t. paprika

Combine all ingredients (I use my Kitchen Aid mixer) and mix well. Press into loaf pan. Bake at 350 degrees for 1 and 1/2 hours.

Note: You can use plain diced tomatoes or the seasoned ones for more flavor. I have made this recipe using ground turkey too...just as tasty. My Grandmother made it with ground bison once (she didn't tell me until afterward):
Gram: "Have you ever had bison before"
BJ: "No."
Gram: "Well you just did.
